This is an excellent oatmeal cookie.
Chewy Oatmeal Cookies I
- 1 cup butter or margarine, softened
- 1 cup firmly packed light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 teaspoons ground cinnamon
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 1/4 cups all-purpose flour
- 3 cups quick-cooking oats
- 1 cup chopped walnuts or pecans
- 1 cup raisins (optional)
- In a large bowl, cream together butter or margarine and sugars until fluffy. Add eggs one at a time, mixing well after each addition. Blend in vanilla, cinnamon, salt, and baking soda.
- Stir in flour, oats, nuts and raisins, and mix until just blended.
- Drop by spoonfuls onto an ungreased cookie sheet.
- Bake at 325*F (160*C) for 12 minutes. Cool cookies on a wire rack.
Makes 3 1/2 dozen.
