Creamy Orange Dessert

1 (6-ounce) package orange gelatin
2 cups orange juice - divided use
1 1/2 cups miniature marshmallows or 12 regular marshmallows
2 cups vanilla ice cream or frozen yogurt
1 (11-ounce) can mandarin orange segments, drained
 
Sweetened whipped cream for accompaniment (optional)
  1. In a large microwavable bowl, combine gelatin and 1 1/2 cups orange jusice. Microwave on HIGH 2 minutes; stir until gelatin is completely dissolved.
  2. Stir in marshmallows and microwave for 1 1/2 to 2 minutes or until marshmallows are puffed and almost melted. Stir until marshmallows are completely melted and mixture is well blended. Add ice cream; beating until completely melted. Stir in remaining 1/2 cup orange juice and the oranges.
  3. Pour into 6 cup ring mold sprayed with cooking spray. Refrigerate 2 hours or until firm.
  4. Unmold onto serving platter. Serve with sweetened whipped cream, if desired.

Makes 12 servings.
