Easy microwave recipe.

Marble Swirl Cheesecake

4 tablespoons butter, melted
1 cup chocolate wafer crumbs
2 (8-ounce) packages cream cheese, softened
1/3 cup granulated sugar
2 large eggs
1 1/2 teaspoons vanilla extract
1/2 cup semisweet chocolate chips
  1. Combine melted butter and chocolate wafer crumbs. Press onto the bottom of a microwave-safe 9-inch pie pan and micro-cook on HIGH for 2 minutes. Cool. In a mixer bowl, beat cream cheese, sugar, eggs, and vanilla until smooth. Pour into the pie crust.
  2. In a small bowl, micro-cook semisweet chocolate chips until the chocolate can be stirred smooth. Drop onto the cheesecake and swirl the chocolate through to create a marbled effect. Micro-cook on MEDIUM for 10 to 12 minutes, or until the center is almost set. Cool then refrigerate until cold, about 5 hours.

Makes 8 servings.
