Lite Freezer Jams (Diabetic)
- 1 3/4 ounce packet no-sugar-needed pectin
3/4 cup cold water
2 1/2 to 3 cups of prepared fruit*
20 Equal® Packets or 6 teaspoons Equal® for Recipes or 3/4 cup plus 2 teaspoons NutraSweet® Spoonful
- Prepare fruit according to desired consistency (peel, and chop or mash).
- In small saucepan, combine pectin and water. Over medium heat, bring to a boil and boil for 1 minute, stirring constantly. Add to prepared fruit and stir for 1 minute. Add Equal® or NutraSweet® Spoonful and stir for 2 minutes.
- Fill containers to 1/2-inch from the top. Seal and let stand at room temperature until firm (several hours). Refrigerate until chilled, or place jam in freezer.
Prepared Fruit Yield (half-pints)
3 cups pears = 4 jars
2 1/2 cups peaches = 4 jars
2 1/2 cups plums = 4 1/2 jars
2 1/2 cups nectarines = 4 jars
3 cups blueberries = 5 1/2 jars
2 1/2 cups strawberries = 4 jars
2 1/2 cups raspberries = 4 jars
2 1/2 cups apricots = 4 jars
