Cheesy Broccoli-Stuffed Skillet Meatloaves Filling:
1/2 cup frozen chopped broccoli, thawed
1/2 cup (2 ounces) shredded cheddar or Co-Jack cheese
Meatloaves:
1 pound lean ground beef
1/2 cup Quaker® Oats (quick or old fashioned, uncooked)
1/2 cup ready-to-serve beef broth, divided use
1 1/2 teaspoons Worcestershire sauce
1/2 to 3/4 teaspoon salt (optional)
1/4 teaspoon black pepper
1/4 cup catsup (optional)
- For filling, combine broccoli and cheese in small bowl. Set aside.
- For meatloaves, combine ground beef, oats, 1/4 cup broth, Worcestershire sauce, salt and pepper in medium bowl, mixing lightly but thoroughly. Shape into four 1/2-inch thick patties (approximately 4-inch diameter). Place an equal amount of reserved filling in center of each patty; bring up edges and seal to enclose filling, shaping to form oval loaves.
- Heat medium non-stick skillet over medium heat until hot. Place meatloaves in skillet; brown 3 minutes on each side. Add remaining 1/4 cup broth to skillet; reduce heat to medium-low. Cover; simmer 12 to 14 minutes or until beef is not pink in center and juices show no pink color. To serve, top each meatloaf with 1 tablespoon catsup, if desired.
