Way easier than regular enchiladas, but tastes just as good, this layered casserole is sure to please your whole family.

Classic Enchilada Casserole

1 pound ground beef
2 tablespoons diced green chiles
1 clove garlic, minced
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon ground cumin
12 corn tortillas
1 cup chopped black olives
1 onion, chopped
4 cups (16 ounces) shredded cheddar cheese
  1. Preheat oven to 350°F (175°C).
  2. In a skillet, brown ground beef then remove the meat to drain. Saute green chili peppers and garlic. Add the meat, salt, pepper and cumin.
  3. In a baking dish, arrange layers using first 4 corn tortillas on the bottom, then the meat, black olives, onion and cheddar cheese on top. Repeat for 3 layers.
  4. Bake 15 minutes, or until bubbly.

Makes 6 servings.
