Microwave recipe.

Mexi Casserole

1 pound ground beef
3/4 cup chopped peeled onion
1/2 cup chopped celery
1 (15.5-ounce) can kidney beans, drained
1 (12-ounce) can corn, drained
1 (8-ounce) can tomato sauce
1/2 cup sliced black olives
1 1/2 teaspoons chili powder
1 teaspoon seasoned salt
1/2 teaspoon ground black pepper
1/2 cup shredded cheddar cheese
1/2 cup crushed corn chips
  1. Combine ground beef, onion and celery in a microwave-safe baking dish. Cover with plastic wrap and microwave on HIGH for 5 to 7 minutes, or until the beef is done, stirring twice; drain.
  2. Stir in kidney beans, corn, tomato sauce, olives, chili powder, seasoned salt and pepper. Microwave on HIGH for 4 to 5 minutes, turning once.
  3. Sprinkle with cheddar cheese then with corn chips. Microwave on MEDIUM for 1 minute, or until the cheese melts. Serve immediately.

Makes 6 servings.
