This barbecue-flavored beef and bean supper-in-a-pot
makes a hearty meal when served with warm cornbread or corn muffins.
Old Settler's Beans
- 1 pound ground beef
1/4 pound smoked bacon, chopped
1 medium onion, chopped
- Salt and pepper to taste
1 (15-ounce) can red kidney beans, rinsed, drained
- 1 (15-ounce) can lima beans, rinsed, drained
1 (15-ounce) can pork and beans
- 1 cup strong beef broth
1/4 cup commercial barbecue sauce
1/4 cup ketchup
1 teaspoon chili powder
1 teaspoon prepared mustard
- Preheat oven to 350°F (175°C).
- In a large ovenproof Dutch oven, cook
beef, bacon, and onions together until beef is done. Drain. Season
to taste with salt and pepper.
- Stir in the remaining ingredients and
gently mix well.
- Bake, uncovered for 1 hour.
Serves 4 to 6.
