If you're craving lasagna, and you need it now, try this almost-instant skillet lasagna. Serve with bread and green salad for a quick, well-rounded meal.

Skillet Lasagna

1 pound lean ground beef
1 (7.75-ounce) package lasagna pasta dinner mix
4 cups hot water
1 (8-ounce) container ricotta cheese
1 large egg, beaten
1/4 cup freshly grated Parmesan cheese
2 green onions, thinly sliced
1/2 teaspoon crushed dried basil
  1. Brown beef in a large skillet; drain. Stir in lasagna pasta mix (including sauce packet) and water; heat to boiling, stirring occasionally. Reduce heat, cover and simmer for 10 minutes, stirring occasionally.
  2. Meanwhile, stir together ricotta cheese, egg, Parmesan cheese, green onions and basil; spoon evenly over beef mixture. Cover and cook 5 more minutes. Remove from heat and let stand, uncovered, 5 minutes. Serve immediately.

Makes 5 servings.
