Sweet and Sour Meat Loaf

1 (8-ounce) can tomato sauce
1/4 cup firmly packed brown sugar
1/4 cup apple cider vinegar
1 teaspoon prepared mustard
2 pounds lean ground beef
1 cup sliced mushrooms
1 large egg
1/4 cup chopped onion
1/4 cup crushed saltine crackers
1 teaspoon salt
1/4 teaspoon ground black pepper

  1. Preheat oven to 400°F (205°C).
  2. In a bowl, combine tomato sauce, brown sugar, vinegar and mustard.
  3. In another bowl, combine ground beef, mushrooms, egg, onion, crackers, salt and pepper; knead together, then add half the tomato sauce mixture.
  4. Place in a loaf pan. Pour the remaining sauce on top.
  5. Bake 45 minutes, or until done. Allow to cool for 5 minutes before slicing.

Makes 6 servings.
