Baked Harvest
Apples
- 8 medium baking apples
1 cup apple juice
1/3 cup brown sugar, firmly packed
1 teaspoon ground cinnamon
1 cup (4 ounces) shredded cheddar cheese
1/4 cup chopped dates or raisins
1/4 cup nuts, toasted*
- Preheat oven to 350°F
(175°C).
- Core apples to within
1/2-inch of their bottoms; pierce the skins with a sharp knife.
Place apples in shallow baking dish.
- Combine juice, sugar and
cinnamon; pour over apples.
- In a small bowl, combine
cheese, dates and nuts; set aside.
- Bake 30 to 35 minutes
or until apples are tender, basting occasionally with the juice
mixture. Remove apples from oven.
- Spoon cheese mixture evenly
into centers of apples. Let stand 1 minute to allow cheese to
melt.
Makes 8 servings.
*To toast nuts, place in
a shallow baking pan. Bake at 350°F (175°C) for 10 to
15 minutes or until nuts are lightly browned, stirring occasionally.
Cool.
