Creamy Strawberry Mold

2 cups boiling water
1 (6-ounce) package strawberry gelatin
1 cup cold water
2 cups vanilla ice cream, softened
2 cups miniature marshmallows - divided use
  1. In a medium bowl, combine boiling water and gelatin and stir until completely dissolved. Stir in cold water. Let stand about 20 minutes to cool to room temperature.
  2. Add ice cream and stir until completely melted. Stir in 1 1/2 cups of the marshmallows. (They will float to the top.)
  3. Spray 5-cup mold with cooking spray. Pour gelatin mixture into prepared mold.
  4. Refrigerate 4 hours or until firm. Unmold onto serving plate.
  5. Garnish with remaining marshmallows. Store leftover gelatin mold in refrigerator.

Makes 10 servings.
