Lamb shanks are seasoned
with slices of garlic, crumbled feta cheese, lemon and herbs
and wrapped in parchment paper to roast. Tender, flavorful lamb
with no fuss...and no muss.

Baked in Paper
- 3 pounds lamb shanks
2 garlic cloves, sliced
2 ounces feta cheese
2 fresh lemons
1 teaspoon dried thyme
1 teaspoon dried mint leaves
1 teaspoon dried oregano leaves
1 tablespoon salt
1/2 teaspoon pepper
1 package parchment paper
- Pat dry sliced lamb. Cut
slits with a small, sharp knife on all sides. Insert slices of
garlic clove and feta cheese. Rub with the juice from lemons.
Sprinkle with thyme, mint, oregano, salt, and pepper.
- Wrap in cooking parchment
paper and tie with string.
- Bake for 2 1/2 hours in
a 350°F
(175°C) oven, or until done.
