Lamb meatballs, beans and tomatoes combine simply for a Mediterranean-style meal.

Microwave Greek-Style Lamb and Beans

1 pound ground lamb
1/2 teaspoon garlic salt
1 teaspoon Italian seasoning
1 (15-ounce) can navy beans, drained and rinsed
2 tomatoes, seeded and chopped
1/2 cup white wine
1/2 teaspoon garlic salt
  1. In a medium bowl combine lamb, first addition of garlic salt and Italian seasoning; mix thoroughly. Form into balls and arrange in a microwave-safe baking dish. Cover with waxed paper and microwave on high for 3 minutes. Rotate the dish a quarter turn and continue cooking on high for 1 to 2 minutes or until center of meatballs are cooked. Remove meatballs from dish and drain on paper towel.
  2. In the same dish, combine beans, tomatoes, white wine, and additional garlic salt and microwave, uncovered, on high for 5 minutes, stirring once.
  3. Return the meatballs to the dish and continue cooking on MEDIUM for 2 minutes. Garnish with chopped parsley and lemon zest (optional). Serve over rice, orzo, or couscous.

Makes 4 servings.
