Lamb meatballs, beans and tomatoes combine simply for a Mediterranean-style meal.
Microwave Greek-Style Lamb and Beans
- 1 pound ground lamb
1/2 teaspoon garlic salt
1 teaspoon Italian seasoning
1 (15-ounce) can navy beans, drained and rinsed
2 tomatoes, seeded and chopped
1/2 cup white wine
1/2 teaspoon garlic salt
- In a medium bowl combine lamb, first addition of garlic salt and Italian seasoning; mix thoroughly. Form into balls and arrange in a microwave-safe baking dish. Cover with waxed paper and microwave on high for 3 minutes. Rotate the dish a quarter turn and continue cooking on high for 1 to 2 minutes or until center of meatballs are cooked. Remove meatballs from dish and drain on paper towel.
- In the same dish, combine beans, tomatoes, white wine, and additional garlic salt and microwave, uncovered, on high for 5 minutes, stirring once.
- Return the meatballs to the dish and continue cooking on MEDIUM for 2 minutes. Garnish with chopped parsley and lemon zest (optional). Serve over rice, orzo, or couscous.
Makes 4 servings.
