This tasty variation of classic baked potatoes can be prepared in no time in your microwave oven.

Savory Lamb Potatoes

4 baking potatoes
1/2 cup sliced celery
1/2 cup sliced carrot
1/4 cup chopped onion
1 pound ground lamb
1 cup tomato sauce
2 teaspoons Worcestershire sauce
  1. Pierce potato skins with a fork. Place in a circle on a paper towel and microwave on high 11 to 13 minutes, or until tender, turning over once. Wrap each potato in aluminum foil and set aside.
  2. In a large microwave-safe dish, combine celery, carrots, and onion. Cover and microwave on high 1 minute. Stir in lamb; cover and microwave on high 5 minutes, or until the meat is no longer pink, stirring once. Drain. Stir in tomato sauce and Worcestershire sauce. Microwave, covered, on high 2 minutes.
  3. Slit the potatoes lengthwise, pinching the ends to blossom open, and top with the lamb mixture. Serve immediately.

Makes 4 servings.
