A modest sodium, low potassium, low carb recipe.

Cheddar Cheese Ball

8 ounces (225g) bar light cream cheese, softened
1 cup (240mL) cheddar cheese, grated finely
1 1/2 tablespoons (22.5mL) Mrs. Dash® Garlic and Herb Seasoning Blend
1/4 teaspoon (1.25mL) dry mustard
1/2 cup (120mL) finely chopped roasted red peppers
3 green onions, finely chopped
1/2 cup (120mL) walnuts, finely chopped
  1. Place cream cheese, cheddar cheese, Mrs. Dash® Garlic and Herb Seasoning Blend and dry mustard in food processor; process until well combined and smooth.
  2. Remove from food processor to bowl. Fold in roasted red peppers and green onions.
  3. Remove from bowl, wrap the cheese mixture in plastic wrap. Form a ball and refrigerate 2 or 3 hours or until firm.
  4. Place chopped walnuts on large plate and roll cheese ball in walnuts, gently pressing them into the surface.
  5. Place cheese ball on a cheese platter and surround with crackers.

Makes 4 servings; Serving size: 2.1 ounces (58.1g).
