This flavorful asparagus casserole couldn't be easier, just combine all the ingredients in one dish and bake. Serve either as a hearty side dish or meatless main dish.

California Fresh Asparagus Casserole

1 1/2 cup water
1 1/2 cup vegetable stock
1 teaspoon salt
1 pound asparagus
2 tablespoons butter
1 small onion, finely chopped
3 cloves garlic, minced
1 cup uncooked long grain rice
1/2 cup diced red bell pepper
1/2 cup freshly grated Parmesan cheese
  1. Mix all ingredients, pour into a greased 2-quart casserole and cover.
  2. Bake in oven at 400°F (205°C) for 20 minutes. Stir and then bake another 20 minutes.

Makes 4 to 6 servings.
