Two kinds of cheese give this recipe a savory taste.

Fast Creamy Broccoli Rice

2 tablespoons low-sodium chicken broth or water
1 (10 ounce) package frozen broccoli spears
Instant rice, white or brown, cooked according to package directions (Women: 1 1/2 cups / Men: 2 cups)
2 slices fat-free American or Swiss cheese singles
1 tablespoon Parmesan cheese
Ground white pepper
  1. Heat the oil in a large nonstick skillet over medium heat.
  2. Add the fennel, pepper, and garlic and cook for 5 minutes or until the fennel is tender but not mushy.
  3. Add the red pepper and shrimp. Cook 4 to 5 minutes, stirring occasionally, until the shrimp are pink.
  4. Add the lime juice and serve.

Makes 1 serving.
