In under 30 minutes you can serve these individual apple pies.

Fried Apple Pies

1 (12-ounce) package frozen escalloped apples
1/4 cup cinnamon-sugar - divided use
1 tablespoon butter, melted
1 (15-ounce) package refrigerated pie crusts
Vegetable oil
Vanilla ice cream for accompaniment
Caramel sauce for accompaniment
  1. Thaw escalloped apples in microwave at MEDIUM (50% power) 6 to 7 minutes; stir in 3 tablespoons cinnamon sugar and butter.
  2. Unfold pie crusts; roll each to 1/8-inch thickness on a lightly floured surface. Cut each into 7 (4-inch) circles. Spoon about 1 tablespoon apple mixture in center of each circle. Dampen edges with water, and fold pastry over filling. Press edges with a fork to seal.
  3. Pour oil to a depth of 1/2-inch into a large heavy skillet. Fry half of pies in hot oil over high heat 2 minutes on each side. Drain on paper towels, and sprinkle with 1 1/2 teaspoons cinnamon sugar. Repeat procedure with remaining pies and cinnamon-sugar. Serve with ice cream and caramel sauce, if desired.

Makes 14 pies.
