A microwave recipe.

Gooey Shoofly Pie

1 cup all-purpose flour
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon butter
1/2 teaspoon baking soda
1/4 cup hot water
1/4 cup packed brown sugar
1/4 cup molasses
1/4 cup light corn syrup
1 large egg
1 (9-inch) baked pie shell
  1. In a medium bowl, combine flour, 1/3 cup brown sugar, cinnamon, and nutmeg. Cut in butter until crumbly; set aside.
  2. Dissolve baking soda in 1/4 cup hot water. Beat in 1/4 cup brown sugar, molasses, light corn syrup, and egg. Pour half of this mixture into baked pie shell. Sprinkle half of the cinnamon crumb mixture on top. Repeat the layers.
  3. Microwave on medium power for 10 to 12 minutes, turning once.

Makes 8 servings.
