A microwave recipe.
Gooey Shoofly Pie
- 1 cup all-purpose flour
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon butter
1/2 teaspoon baking soda
1/4 cup hot water
1/4 cup packed brown sugar
1/4 cup molasses
1/4 cup light corn syrup
1 large egg
1 (9-inch) baked pie shell
- In a medium bowl, combine flour, 1/3 cup brown sugar, cinnamon, and nutmeg. Cut in butter until crumbly; set aside.
- Dissolve baking soda in 1/4 cup hot water. Beat in 1/4 cup brown sugar, molasses, light corn syrup, and egg. Pour half of this mixture into baked pie shell. Sprinkle half of the cinnamon crumb mixture on top. Repeat the layers.
- Microwave on medium power for 10 to 12 minutes, turning once.
Makes 8 servings.
