Pecan Pie
2 tablespoons butter or
margarine
2 large eggs, beaten
1/2 cup dark corn syrup
1/3 cup granulated sugar
2 teaspoons all-purpose flour
1/4 teaspoon vanilla extract
1/2 cup pecan halves

- In a small microwave-safe
bowl, melt butter, uncovered, on HIGH for 30 seconds to 1 minute
or until melted. Whisk in eggs and corn syrup until smooth; then
stir in sugar and flour. Microwave, uncovered, on MEDIUM for
about 5 minutes or until slightly thickened, stirring in 1-minute
intervals. Stir in vanilla, and pour into pie crust.
- Arrange pecan halves on
top and microwave, uncovered, on MEDIUM for 6-7 minutes or until
just set, rotating the dish a quarter-turn every 2 minutes. Cool
before serving.
Makes 8 servings.
