Give pork ribs the fresh twist with mint and garlic. Serve with flatbread, rice pilaf, fried eggplant and fresh peaches.

Istanbul Ribs

2 slabs pork spareribs
4 cloves garlic, crushed
Salt and pepper, to taste
1/2 cup chopped fresh mint
1/4 cup olive oil
1/4 cup red wine vinegar
Pickled jalapeno peppers (optional)
  1. Rub spareribs all over with garlic; salt and pepper generously and spread mint evenly over all rib surfaces. Place ribs in a shallow pan; drizzle with oil and vinegar, cover and refrigerate overnight.
  2. Place ribs over drip pan over indirect heat or meadium low; close grill hood and grill for 1 1/2 hours, until ribs are tender.
  3. Serve with pickled peppers, if desired.
