A microwave recipe for orange-glazed diced ham.

Orange-Glazed Diced Ham

8 ounces diced cooked ham
1 celery rib, sliced
1 tablespoon water
1 (11-ounce) can Mandarin orange sections
1/4 cup pineapple chunks, crushed
1/2 teaspoon cornstarch
1/8 teaspoon ground cinnamon
  1. In a microwave-safe baking dish, cook diced ham, diagonally sliced celery rib, and water, covered, on HIGH for 5 to 6 minutes, or until heated through.
  2. Drain mandarin orange sections, and pineapple chunks, reserving 3 tablespoons of liquid.
  3. Stir together cornstarch and cinnamon. Stir in reserved liquid. Cook, uncovered, on HIGH for 45 seconds to 1 minute, or until thickened and bubbly, stirring twice.
  4. Drain the liquid from the ham/celery mixture; then stir in orange/pineapple mixture, and heated liquid. Cook, uncovered, on HIGH for 45 seconds to 1 minute, or until heated through.

Makes 4 servings.
