Chicken Scampi

1/2 cup butter
1/4 cup olive oil
2 teaspoons dried parsley
1 teaspoon dried basil
1/4 teaspoon dried oregano
4 large garlic cloves, finely minced
4 boneless chicken breast halves, cut into long strips
Salt and freshly ground pepper to taste
2 tablespoons fresh lemon juice or to taste
Cooked long grained rice or noodles
  1. In a skillet heat the butter and oil over medium-high until melted. Add the parsley, basil, oregano and garlic and saute until garlic begins to turn lightly golden, about 30 seconds. (Do not let garlic burn or it will taste bitter.)
  2. Add the chicken and saute until golden brown, about 3 minutes. Season with salt and pepper. Lower the heat and cook for about 10 minutes or until chicken is cooked through. Remove from heat and stir in lemon juice.
  3. Serve with cooked rice or noodles.

Makes 4 servings.
