Who says you have to have shrimp to have scampi? This quick and easy dish is made with chicken and ingredients readily found in a well-stocked pantry, is sure to become a family favorite.

Chicken Scampi

1/2 cup butter
1/4 cup extra virgin olive oil
2 teaspoons dried parsley
1 teaspoon dried basil
1/4 teaspoon dried oregano
4 large garlic cloves, finely minced
4 boneless, skinless chicken breast halves, cut into long strips
1 teaspoon kosher or sea salt
Freshly ground pepper to taste
1/4 cup fresh lemon juice or to taste
Hot cooked noodles or rice
  1. In a skillet heat the butter and oil over medium-high until melted. Add the parsley, basil, oregano and garlic and saute until garlic begins to turn lightly golden, about 30 seconds. (Do not let garlic burn or it will taste bitter.)
  2. Season chicken with salt and pepper and saute until golden brown, about 3 minutes. Lower the heat and cook for about 10 minutes or until chicken is cooked through. Remove from heat and stir in lemon juice.
  3. Serve with cooked noodles or rice.

Makes 4 servings.
