Serve a tossed green salad with this super easy casserole to complete the meal.

Chicken Noodle Pie

1 (40-ounce) package frozen escalloped chicken and noodles
Vegetable cooking spray
1/2 cup Italian-seasoned bread crumbs - divided use
3 large eggs, lightly beaten
4 green onions, sliced
1/2 red bell pepper, seeded and diced
1/2 teaspoon ground black pepper
1 cup (4 ounces) shredded cheddar-American cheese blend
  1. Thaw escalloped chicken and noodles in refrigerator overnight.
  2. Coat a 9-inch deep-dish pie plate with cooking spray; sprinkle bottom and sides with 2 tablespoons bread crumbs.
  3. Stir together escalloped chicken and noodles, eggs, and next 3 ingredients. Spoon mixture into prepared pie plate; sprinkle with remaining bread crumbs.
  4. Bake at 350°F (175°C) for 45 minutes or just until set. Sprinkle with cheese, and bake 5 more minutes.
