Chicken Sweet Potato Bake

1 cut-up broiler-fryer chicken, skin removed
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon seasoned pepper
4 medium sweet potatoes, cooked, peeled, cut into 1/2-inch slices
2 teaspoons grated orange peel
3/4 cup apple juice
  1. Mix together ginger, nutmeg and pepper; sprinkle on all sides of chicken.
  2. In shallow 2-quart baking dish, arrange chicken in single layer. Place sweet potatoes around chicken. Sprinkle with orange peel and pour apple juice over all.
  3. Bake in 400°F. oven about 1 hour or until fork can be inserted in chicken with ease, basting with liquid in dish several times.

Makes 4 servings.
