Curried Honey
Dijon Chicken
- 1/3 cup butter, melted
- 1/3 cup honey
- 1/4 cup Dijon-style mustard
- 4 teaspoons curry powder
- 1/8 teaspoon cayenne pepper
- 8 skinless, boneless chicken
breast halves
- In a medium bowl combine
the melted butter, honey, mustard, curry powder and cayenne powder, mixing well.
- Place chicken breasts
in a 9 x 13 x 2-inch baking dish and pour curried/honey mixture
over chicken. Cover and place
in refrigerator. Marinate for at least 4 hours or overnight.
- Preheat oven to 375°F
(190°C).
- Bake, covered, for 15
minutes. Remove cover and bake about 10 to 15 minutes more or
until done and juices run
clear.
Makes 6 to 8 servings.
