Turn a convenience mix into your own creation with fresh mushrooms, pea pods and bean sprouts.
Easy Chicken Fried Rice
- 2 tablespoons butter or margarine
1 (6.2-ounce) package rice and vermicelli fried rice mix
1 3/4 cups water
1 cup sliced fresh mushrooms
14 ounces boneless skinless chicken breast strips
1 1/2 cups fresh pea pods, tips and strings removed, halved
1 cup fresh bean sprouts
- Melt butter in 10-inch skillet until sizzling; add rice and vermicelli mix. Cook over medium-high heat, stirring occasionally, until lightly browned (3 to 4 minutes). Add rice seasoning mix, hot water, mushrooms and chicken strips. Continue cooking until mixture comes to a boil (3 to 4 minutes).
- Reduce heat to low. Cover; cook 10 minutes. Add pea pods and bean sprouts. Cover; continue cooking until rice is tender and liquid is absorbed (3 to 5 minutes). Fluff with fork.
Makes 4 (1 1/4-cup) servings.
