Hot 'n' Honey Glazed Chicken
- 4 boneless, skinless chicken breast halves
1 banana, quartered and quarters cut in half lengthwise
1 tablespoon vegetable oil
2 garlic cloves, minced
1/2 cup hot pepper jelly
2 teaspoons honey
1 tablespoon lime juice
1/2 cup orange juice
1 cup red seedless grape halves
Strips of lime and orange peel
- In large nonstick frypan, place oil and heat to medium temperature. With palm of hand, flatten chicken slightly. Add chicken and garlic to frypan; sauté 10 minutes, turning chicken once.
- In small bowl, mix together pepper jelly, honey and lime juice. Spoon mixture over chicken and continue cooking, turning once, about 5 minutes until chicken is glazed and fork can be inserted with ease. Remove chicken to serving dish.
- To frypan, add orange juice, stirring. Place banana sections and grapes in frypan; spoon glaze mixture over top of fruit and cook about 1 minute until fruit is well coated.
- Arrange fruit on serving dish with chicken. Garnish with strips of lime and orange peel.
