A microwave recipe.

Lemon Turkey Cutlets

Vegetable cooking spray
1/2 cup dry bread crumbs
1/4 teaspoon salt
1/4 teaspoon ground pepper
1 1/2 pounds turkey cutlets, sliced
1 tablespoon cornstarch
1 cup chicken broth
2 tablespoons lemon juice
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons chopped fresh basil
1 lemon, sliced
  1. Spray vegetable oil over baking dish.
  2. Combine dry bread crumbs, salt, and pepper in a shallow dish. Dip sliced turkey in crumbs and arrange in the prepared baking dish. Cover and cook on MEDIUM for 5 minutes, turn the dish and continue cooking on HIGH for 6 minutes, or until done. In a small bowl, combine cornstarch, chicken broth, and lemon juice. Cook on HIGH for 3 minutes, stirring twice, or until the mixture boils and thickens. Stir in chopped parsley, basil, and thinly sliced lemon. Cook on HIGH for 1 minute. Pour over the turkey.

Makes 6 servings.
