A quick and easy casserole using cooked turkey and frozen hash brown potatoes. A good recipe for using leftover turkey.

Parmesan Turkey and Potatoes

1/4 cup butter
2 tablespoons freshly grated Parmesan cheese
1/2 teaspoon dry mustard
1/8 teaspoon garlic powder
1 (12-ounce) package frozen hash brown potatoes
3 cups cooked turkey, sliced or chopped
  1. Preheat oven to 350°F (175°C). Grease 13 x 9-inch baking dish.
  2. In a large bowl combine melted butter, grated Parmesan cheese, dry mustard, and garlic powder. Stir in semi-thawed hash brown potatoes.
  3. Place half the potato mixture in baking dish, top with the turkey, and cover with the remaining potato mixture.
  4. Bake for 15 to 20 minutes, or heated through.

Makes 6 servings.
