This casserole may remind you of a turkey salad sandwich but with a southwest influence, which is sure to tickle your taste buds. Serve with spicy coleslaw and cool glasses of ied tea with lime wedges.

Southwest Smoked Turkey Casserole

2 cups shredded smoked turkey
1 1/2 cups diced celery
1 cup mayonnaise
1/2 cup slivered almonds, toasted
1 (4-ounce) can ORTEGA® Diced Green Chiles
1/4 cup diced onion
1 tablespoon lemon juice
1 tablespoon lime juice
1/2 cup shredded Mexican blend cheese
1 cup crushed corn chips
  1. Preheat oven to 350°F. Lightly grease 1 1/2-quart casserole.
  2. Combine turkey, celery, mayonnaise, almonds, chiles, onions, lemon juice and lime juice.
  3. Transfer to prepared casserole. Sprinkle with cheese and chips.
  4. Bake for 30 to 35 minutes or until hot and cheese is melted.

Makes 4 servings.
