Spicy Turkey Roast

8 garlic cloves
3 tablespoons rosemary
1 tablespoon pepper
1 teaspoon salt
2 tablespoons olive oil
1 (approximately 10-pound) whole turkey
  1. Preheat oven to 350*F.
  2. In a food processor with the steel blade in place, or in the blender, combine garlic cloves, rosemary, pepper, and salt. While processing, slowly add olive oil. Spread half the garlic mixture over the inside of a turkey. Spread the remainder evenly over the outside of the turkey. Place on a rack in a roasting pan.
  3. Roast for 1 1/2 to 2 hours, or until a meat thermometer inserted in the center registers 170*F. Let stand for 20 minutes before carving.

Makes 8 servings.
