Tea Smoked Chicken with Sesame Vegetable Relish

Aluminum foil
1/4 cup raw rice
1/4 cup molasses
1/4 cup packed brown sugar
1/4 cup black tea leaves
1 stick cinnamon
1 tablespoon whole allspice
4 boneless, skinless chicken breast halves
Vegetable Relish (recipe follows)
Sesame seeds
  1. Line wok or stockpot with foil. On top of foil, place rice, molasses, brown sugar, tea leaves, cinnamon stick and allspice; stir gently.
  2. Place small rack over mixture and arrange chicken breasts on rack.
  3. Cover and cook over medium heat for 10 minutes. Remove from heat and let stand 10 minutes; slice chicken.
  4. Place Sesame Vegetable Relish on serving dish and arrange chicken on top Garnish with sesame seeds.

Makes 4 servings.

Sesame Vegetable Relish: In medium bowl, mix together 2 tablespoons sesame oil, 2 tablespoons seasoned rice wine vinegar, 2 cloves crushed garlic, 2 teaspoons soy sauce, 1/2 teaspoon crushed red pepper, 1/2 teaspoon grated orange peel, 4 tablespoons finely diced water chestnuts, 4 tablespoons finely diced red bell pepper, 4 tablespoons finely diced carrot, 4 tablespoons finely diced celery, 2 tablespoons chopped cilantro and 2 small green onions, minced.
