This is a versatile dish,
offering a savory way to prepare cooked (or leftover) turkey
or chicken. Simply combine with cooked rice, beaten eggs, milk
and top with two kinds of zesty grated cheeses.
Turkey
and Rice Quiche
- 3 cups cooked rice
3 cups diced cooked turkey or chicken
1 tomato, seeded and diced
1/4 cup sliced green onion
1/4 cup diced green bell pepper
1 teaspoon dried basil leaves, crushed
1/2 teaspoon seasoned salt
1/8 teaspoon cayenne pepper
1/2 cup milk
3 large eggs, beaten
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
- Preheat oven to 350°F
(175°C). Lightly spray an 11 x 7 x 2-inch baking dish with
vegetable cooking spray; set aside.. Combine rice, turkey, tomato,
green onion, green bell pepper, basil, seasoned salt, cayenne
pepper, milk and beaten eggs in a large bowl; mix thoroughly.
- Pour into prepared baking
dish; bake for about 25 minutes or until center is nearly set.
- Remove from oven, sprinkle
with cheddar cheese and mozzarella cheese. Return to oven and
bake an additional 2 minutes or until cheese is melted.
- Allow to sit about 5 minutes
before serving.
