Strips of turkey tenderloin are marinated in an Asian peanut sauce and grilled. While the strips are grilling, the sauce is boiled and cooked for five minutes and served as a dipping sauce with the turkey.

Turkey Bites with Peanut Sauce

1 tablespoon packed brown sugar
2 clove garlic, minced
4 tablespoons minced onion
1 teaspoon ground ginger
1/2 cup roasted peanuts, unsalted
2 tablespoons lemon juice
1/4 cup soy sauce
2 teaspoons coriander seed
1/2 teaspoon cayenne pepper
1/2 cup chicken broth
1/4 cup butter, melted
1 1/2 pounds Shady Brook Farms™ turkey tenderloin strips
  1. Blend all ingredients except broth, butter and turkey for one minute in a blender. Add chicken broth and butter, blend for another minute.
  2. Marinate turkey strips in this mixture for at least six hours.
  3. Drain marinade into a saucepan. Bring marinade to a boil, reduce heat and cook for 5 minutes. Use for dipping sauce.
  4. Grill or broil turkey strips for 7 to 8 minutes or until no longer pink.

Makes 6 servings.
