This quick South-of-the-Border casserole will add some zip to the end of a long day.

Turkey Cornbread Casserole

1 pound ground turkey
1/4 cup finely chopped onion
1 (4-ounce) can diced green chiles
1 (1-ounce) packet taco seasoning mix
2 tablespoons water
1 (8.5-ounce) package cornbread mix
1 large egg
1 cup fresh or loose pack frozen corn kernels
1/2 cup shredded cheddar cheese
1/4 cup milk
  1. Preheat oven to 400°F (205°C).
  2. Combine turkey, onion, chiles, taco seasoning and water in heated skillet and cook until turkey is no longer pine; spread mixture in bottom of 9-inch square baking dish and set aside.
  3. Make cornbread batter following the directions on the package with egg, corn, cheese and milk. Pour or spread the batter on top of turkey mixture and bake, uncovered for 20 minutes or until cornbread is set.
  4. Serve hot with your favorite salsa.
