Turkey Meatloaf
- 2 tablespoons olive oil
1 onion, chopped
1 red bell pepper, seeded and chopped
3 cloves garlic, minced
1 tablespoon paprika
1 teaspoon crushed dried sage
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 pound ground turkey
3 large eggs, beaten
1/2 cup half-and-half
2 tablespoons Worcestershire sauce
1/2 cup bread crumbs
- Heat oven to 375°F
(190°C). Grease an 8-inch loaf pan; set aside.
- Heat oil in a large nonstick
skillet. Add onion, bell pepper and garlic; sauté until
soft, about 5 minutes. Add paprika, sage, salt and pepper to
taste. Set aside.
- Mix turkey, eggs, half-and-half
and Worcestershire sauce in a large bowl. Add the vegetable mixture
and bread crumbs. Mix well.
- Put turkey mixture in
loaf pan and bake for 40 minutes or until browned on top. Let
sit for 15 minutes before slicing.
Makes 8 servings.
