Lean ground turkey marries well with other flavors making it a great choice for meatloaf.

Turkey Meatloaf

2 tablespoons olive oil
1 onion, chopped
1 red bell pepper, seeded and chopped
3 cloves garlic, minced
1 tablespoon paprika
1 teaspoon crushed dried sage
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 pound ground turkey
3 large eggs, beaten
1/2 cup half-and-half
2 tablespoons Worcestershire sauce
1/2 cup bread crumbs
  1. Heat oven to 375°F (190°C). Grease an 8-inch loaf pan; set aside.
  2. Heat oil in a large nonstick skillet. Add onion, bell pepper and garlic; sauté until soft, about 5 minutes. Add paprika, sage, salt and pepper to taste. Set aside.
  3. Mix turkey, eggs, half-and-half and Worcestershire sauce in a large bowl. Add the vegetable mixture and bread crumbs. Mix well.
  4. Put turkey mixture in loaf pan and bake for 40 minutes or until browned on top. Let sit for 15 minutes before slicing.

Makes 8 servings.
