Fast and easy Italian-style turkey rolls baked in an microwave oven.

Turkey Rolls Italian-Style

Vegetable cooking spray
1 pound turkey tenderloin, sliced thinly into 6 pieces
Waxed paper
Italian seasoning to taste
1 cup shredded Monterey Jack cheese
1 (14 1/2-ounce) jar marinara or spaghetti sauce
  1. Spray 6 custard cups with vegetable cooking spray.
  2. Place sliced turkey on wax paper and sprinkle Italian seasoning on top. Sprinkle the cheese evenly on the turkey slices and roll up like a jelly roll.
  3. Divide part of marinara sauce in the custard cups. Place a turkey roll in each cup; topping with the remaining spaghetti sauce.
  4. In the center of a microwave oven arrange the custard cups in a circle. Cover each with a sheet of wax paper; microwave on high for 13 to 15 minutes, turning every 5 minutes or until done.
  5. Allow to stand for 5 minutes before serving. Unmold onto serving plates.

Makes 6 servings.
