Soft Turkey Tacos.

A memorable meal doesn't have to be time-consuming and complicated. Many Mexican favorites, such as tacos, can be put together in minutes. Use leftover shredded turkey or ground turkey in this simple soft taco. Round out your meal with refried beans and Mexican rice.

Turkey Soft Tacos

1 tablespoon vegetable oil
1 pound ground turkey or leftover cooked turkey
3/4 cup water
1 (1.25-ounce) package taco seasoning mix
10 (8-inch) soft taco-size flour tortillas, warmed
 
Toppings: shredded cheddar cheese, shredded lettuce, chopped tomatoes, chopped onions, sliced ripe olives, chopped avocados, sour cream, taco sauce
  1. Heat oil in large skillet. Add turkey; cook, stirring occasionally, until no longer pink. Stir in water and seasoning mix. Bring to a boil. Reduce heat to low; cook, stirring occasionally, until mixture thickens.
  2. Fill tortillas with turkey mixture. Top with choice of toppings.

Makes 5 servings.
