Caramelized onions jazz up mild turkey breast.

Turkey with Caramelized Onions

2 tablespoons olive oil - divided use
1 large onion, thinly sliced
3/4 teaspoon salt - divided use
1/2 teaspoon ground black pepper - divided use
1 tablespoon balsamic vinegar
4 fresh boneless, skinless turkey breast cutlets
  1. In a large skillet heat half the oil over medium heat. Sauté onion until dark golden brown, about 10 minutes. Season with half the salt and half the pepper and drizzle with vinegar; sauté 3 more minutes. Remove from pan and cover to keep warm.
  2. Add remaining oil to pan and heat over medium-high heat. Add turkey, season with remaining salt and pepper and sauté until golden and thoroughly cooked, about 4 minutes per side. Remove to serving plates and top with warm onion mixture.

Makes 4 servings.
