Turn macaroni and cheese into a hearty main course with a zingy mixture of turkey and salsa and a homemade cheese sauce.

Zippy Turkey and Mac

1 (8-ounce) package elbow macaroni
1 tablespoon vegetable oil
1 pound lean ground turkey
1/4 cup salsa
1/2 cup milk
2 cups shredded cheddar cheese
1 medium carrot, peeled and shredded
  1. Heat oven to 350°F (175°C).
  2. Prepare pasta according to package directions; rinse and drain.
  3. Meanwhile, heat oil in a large nonstick skillet over medium-high heat. Add turkey and brown. Stir in salsa and bring to a boil. Reduce heat and simmer for 5 minutes, or until turkey is thoroughly cooked. Remove from heat and season to taste with salt and pepper.
  4. In a small, heavy-bottomed saucepan, combine milk and 1 1/2 cups of cheese. Cook over medium heat; whisking until smooth and thick, about 5 minutes. Season to taste with salt and pepper.
  5. In a 2-quart casserole, combine macaroni, turkey, cheese sauce and carrots. Mix well and top with remaining 1/2 cup of cheese. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake another 10 minutes, or until top is lightly browned. Allow to stand 10 minutes before serving.

Makes 4 servings.
