Serve this light and refreshing rice salad
at room temperature or chill for a cool accompaniment to your
favorite spicy Mexican entrée.
Lime
Rice and Black Bean Salad
- 4 cups cooked rice
1 tablespoon lime juice
2 cups diced fresh tomato
1 (15-ounce) can black beans, rinsed and drained
1 (4-ounce) can diced green chiles
1/2 cup sliced green onion
1 1/2 tablespoons chopped fresh cilantro
1 1/2 teaspoons chili powder
1 1/2 teaspoons ground cumin
6 large lettuce leaves
- Combine rice and lime
juice in a large bowl. Add tomatoes, beans, chiles, green onion,
cilantro, chili powder and cumin. Season with salt and ground
black pepper.
Serve over lettuce leaves.
