Lite 'n' Lovely Gelatin Salad

1 (12-ounce) package orange gelatin
4 cups boiling water
2 cups cold water
1 (20-ounce) can pineapple chunks, undrained
1 pint strawberries, hulled and sliced
2 avocados, peeled, pitted and sliced
1/4 cup water
1/4 cup lemon juice
1 (1/4-ounce) envelope unflavored gelatin
2 cups plain yogurt
  1. Whisk together orange gelatin and boiling water in a 13x9x2-inch baking dish; add cold water and stir in pineapple chunks and juice, strawberries and avocados. Refrigerate until set, about 3 to 4 hours.
  2. Combine water and lemon juice in a small saucepan, add unflavored gelatin and allow to soften. Cook over medium heat stirring until the gelatin is completely dissolved, about 5 minutes.
  3. In a medium bowl, combine yogurt and the unflavored gelatin mixture, beat until smooth. Cool slightly then pour over the chilled fruit/orange gelatin mixture. Refrigerate for 1 to 2 hours, or until set. Cut into squares before serving.

Makes 24 servings.
