Egg Salad Sandwiches
- 1 (3-ounce) package cream
cheese with chives, softened
2 tablespoons butter, softened
2 tablespoons chopped celery
1 tablespoon mayonnaise or salad dressing
1 teaspoon finely chopped onion
1 teaspoon granulated sugar
1/2 teaspoon horseradish
1/2 teaspoon lemon juice
1/4 teaspoon salt
1/8 teaspoon pepper
Dash garlic powder
6 large eggs, hard-cooked and finely chopped
1 to 2 tablespoons mayonnaise or salad dressing
8 slices rye bread
- In a medium mixing bowl,
combine cream cheese and butter. Stir until smooth.
- Stir in celery, mayonnaise,
onion, sugar, horseradish, lemon juice, salt, pepper, and garlic
powder.
- Fold in hard-cooked eggs.
- Cover and chill in the
refrigerator at least 1 hour.
- Let stand at room temperature
about 15 minutes before preparing sandwiches. If desired, stir
in 1 to 2 tablespoons additional mayonnaise.
- For each sandwich, spread
1/2 cup egg mixture on 1 slice rye bread. Top with another slice
of bread.
