Put a little zip into your next lunch or dinner with these warm and cheesy sandwiches. Serve with french fries dusted with chili powder and barbecue sauce in place of ketchup for dipping.

Durango Beef and Cheddar Sandwiches

1 pound beef, cooked and shredded
1 (4-ounce) can diced green chiles
1/2 cup tomato ketchup
1/4 cup frozen corn, thawed
1/4 cup water
1 teaspoon chili powder
1 teaspoon granulated sugar
1/4 teaspoon ground cumin
6 buns, split and toasted
6 slices cheddar cheese
  1. Preheat oven to broil.
  2. Combine beef, chiles, ketchup, corn, water, chili powder, sugar and cumin in medium saucepan. Bring to boil; reduce heat to low. Cook for 10 minutes. Cool slightly.
  3. Spoon warm meat mixture onto bottom halves of buns. Top with cheese slices and broil for 3 to 5 minutes, or until cheese is melted and lightly browned. Place bun tops on sandwiches and serve.
