Broiled or grilled ground
beef and lamb patties, stuffed with a lemon-pepper seasoned feta
cheese and olive mixture, served in warm pita bread with a creamy
cucumber yogurt dressing.

Cheeseburger
- 1 pound ground beef
1/2 pound ground lamb
2 tablespoons finely chopped onion
1/2 teaspoon oregano leaves, crushed
1/4 teaspoon pepper
1/2 cup (3 ounces) crumbled feta cheese
1/4 cup chopped ripe olives
3/4 teaspoon lemon-pepper marinade - divided use
3/4 cup plain yogurt
1/4 cup shredded seeded cucumber, well-drained
4 pita bread rounds, warmed and cut in half
- Combine the beef, lamb,
onion, oregano, and pepper; mix well. Shape into eight 4-inch
patties.
- Combine the cheese, olives,
and 1/2 teaspoon lemon-pepper marinade. Top four patties with
1/4 cup of the cheese mixture; cover with the remaining patties.
Pinch the edges together to seal.
- To broil indoors, preheat
the oven to broil. Place the patties on the greased rack of a
broiler pan. Broil both sides to the desired doneness. Top each
patty with cheese; continue broiling until the cheese is melted.
- To grill outdoors, place
patties on a greased grill over medium coals (the coals will
be glowing). Grill, uncovered, 5 minutes on each side, to desired
doneness. Top each with cheese; continue grilling until the cheese
is melted.
- To serve, cut each cooked
patty in half.
- Combine the yogurt, cucumber,
and 1/4 teaspoon of the lemon-pepper marinade.
- Spread the inside of each
pita bread half with the yogurt mixture; fill with the patty
half.
