This is an updated version of an old favorite. Without the gravy this makes a great picnic fare.

Meatloaf Focaccia Sandwiches

1 (33-ounce) package STOUFFER'S® Family Style Recipes Meatloaf in Gravy
1 large sweet onion, halved and cut into 1/4-inch thick slices
1 tablespoon granulated sugar
1 tablespoon olive or vegetable oil
3/4 cup mayonnaise
1/4 cup chopped fresh basil
2 tablespoons tomato paste
1 (10-ounce) package focaccia*
1 (6-ounce) package provolone cheese slices
2 cups mixed salad greens
  1. Microwave meatloaf according to package directions; keep warm.
  2. Saute onion and sugar in hot oil in a large skillet over medium-high heat 15 to 20 minutes or until golden.
  3. Stir together mayonnaise, basil, and tomato paste. Carefully split focaccia bread in half horizontally; place on a baking sheet, cut sides up. Spread mayonnaise mixture over cut sides; top evenly with cheese slices.
  4. Bake at 375°F for 5 minutes or until cheese begins to melt; remove bread from oven.
  5. Cut meatloaf into thin slices; place evenly over bread. and sprinkle with onion and salad greens. Cut sandwiches into 6 wedges, and serve open face with meatloaf gravy.

Makes 6 servings.

*2 (10 oz.) packages Italian bread shells may be substituted for split focaccia.
