Served with a cool tossed salad and your favorite dressing these hearty sandwiches are sure to tame even the hungriest of appetites.

Meatloaf Sandwiches

1 (33-ounce) package frozen meatloaf in gravy (or use your favorite recipe)
1 medium-size green bell pepper, thinly sliced
1 medium onion, thinly sliced
2 tablespoons vegetable oil
1 teaspoon dried Italian seasoning
6 kaiser rolls, split
1 cup (4 ounces) shredded mozzarella cheese
  1. Bake meatloaf according to package directions. Carefully remove cover from meatloaf. Drain gravy, and cut meatloaf into slices; set aside.
  2. Saute bell pepper and onion in hot oil in a large skillet until tender; remove from skillet, and set aside.
  3. Pour meatloaf evenly on bottom halves of rolls; top with vegetables and gravy. Sprinkle with cheese.
  4. Bake at 350°F (175°C) for 5 minutes or until cheese melts. Top with remaining roll halves, and bake 5 more minutes.

Makes 4 servings.

Meatloaf Grinder: Substitute 1 (16 ounce) French bread loaf, split horizontally, for kaiser rolls. Assemble sandwich; wrap in aluminum foil. Bake at 350°F (175°C) for 10 minutes or until cheese melts.
