Chimichurri sauce is a very versatile Argentinean sauce that can be served over beef, pork, poultry and even as a salad dressing.
1 1/2 cups cilantro
1 1/2 cups parsley
2 cloves garlic
2 tablespoons red wine vinegar
Salt and pepper to taste
1/4 cup extra virgin olive oil
- Combine cilantro, parsley, garlic, red wine vinegar and salt and pepper in a processor.
- While the food processor is still running, add olive oil and continue to blend until all ingredients are well mixed.
- Serve immediately, or cover and refrigerate for up to two days.
Makes about 1 cup.
